MSA employees enjoyed a wonderful, healthy lunch prepared by April Vigardt and Delane Mitchell from the Catawba County North Carolina Cooperative Extension. After an educational presentation of how to use healthy produce from local farmers when preparing our meals, we were treated to sample this delicious food! These gals prepared a lunch of zucchini fritters (one with pork sausage and one without), beet, cucumber and celery relish and spring slaw with a Green Goddess dressing. They also served a cracker and vegetable bread, that tasted like pizza, from a bakery that can be found at the Hickory Farmers Market. Employees each left with a bag of produce and recipes to make these dishes at home.
